🌿VERDE SPAGHETTI🌿
Another quick weeknight pasta coming your way. This one can legit be done in 15 minutes start to finish and the best part it uses up any extra greens you’ve got lieing around in your fridge. As always, recipe below.
2 bunches delicate green herbs (I did 1 bunch basil, 1/2 bunch dill, 1/2 bunch parsley)
4 garlic cloves (roughly chopped)
1 lemon (zest and juice)
1 tbl sp capers
1/4 cup EVOO
Sea salt
1 burrata
2 portions spaghetti
1. Place water and sea salt into a deep pot and put onto high heat and bring to a high rolling boil.
2. To make your verde place all herbs, garlic, lemon, capers, EVOO and two solid pinches of sea salt into food processor and blitz together. Add a little bit more oil if you need to loosen it up. Place to thew side.
3. Cook your pasta to just off al dente. Remove your spaghetti from the water and pop to the side. Pour out your pasta water, leaving a layer at the bottom of the pot, before pouring your verde into the pot and mixing through with pasta water. Place on low heat and add back in your pasta and cook altogether for a minute. Pop onto share plate and finish with a burrata in the middle with a drizzle of EVOO and cut open and swish the pasta through it altogether.
