lemon cheesecake bars!✨🍋🤍🍰 recipe: graham cracker crust: - 1 1/2 cups graham cracker crumbs (160 grams) - 1/4 cup granulated sugar (50 grams) - 1/2 cup butter, melted (113 grams) lemon cheesecake layer: - 16 oz cream cheese - 3/4 cup granulated sugar (150 grams) - 2 large eggs - zest of 1 lemon - 1/4 cup lemon juice (about 2 lemons) - 1 tsp vanilla extract directions: - preheat oven to 350°F and line an 8x8 square baking pan! - make the graham cracker crust by adding the graham cracker crumbs, sugar, and melted butter together until fully combined! - then, press the mixture firmly into the prepared baking dish, using a small cup, to pack the crust firmly into an even layer - bake the crust for 10 minutes and remove from oven to let cool while you make the cheesecake! - in a large bowl, using a hand mixer or use a stand mixer and beat the cream cheese and granulated sugar until smooth and creamy! - then add in the eggs one at a time mixing very well after adding each egg! - next, add in the lemon juice, lemon zest, and vanilla and beat together until fully combined! - pour the cheesecake batter onto the prebaked crust and smooth out evenly then bake for 25-30 minutes, you know its done when the edges are set, but the middle is slightly jiggly! - once the cheesecake is done baking, let it cool to room temperature then place in the fridge for at least 2 hours but up to overnight! - top with whipped cream if desired and cut the cheesecake into squares and serve them chilled and enjoy!! ##lemoncheesecake#cheesecake#cheesecakerecipe#lemondessert#lemon#lemonrecipe#baking#recipe#fyp#FYP
