Maple latte donuts 🍁☕️🍩 but made with zucchini 🤨 Oh, and they’re gluten free, obviously.
Recipe 👇🏼
Donuts:
▢ 1 large grated zucchini, drained
▢ 1/3 cup melted coconut oil
▢ 1/2 cup maple syrup
▢ 2 large eggs
▢ 2 teaspoons vanilla extract
▢ 1 1/2 cups gluten free flour (I used @bobredmills 1:1)
▢ 1 1/2 teaspoons baking powder
▢ 1 teaspoon ground cinnamon
▢ 1 teaspoon fresh grated ginger
▢ 1/2 teaspoon Redmond’s salt
Coffee glaze:
▢ 4 tablespoons coconut oil
▢ 1/4 cup maple syrup
▢ 1/2 cup powdered sugar (powdered sweetener to substitute but make sure to check your ratios as alt. sweeteners can be 2-10x sweeter)
▢ 1/4 cup brown sugar (I like using coconut, date, or maple sugar to substitute)
▢ 2 teaspoon instant coffee
▢ 1/2 teaspoon cinnamon
Bake your donuts in the oven at 350° for 12 mins. Allow to cool a bit, then glaze and enjoy 😚 I paired mine for breakfast with coffee (ofc) and spiced apple Greek yogurt (protein!!) with TJ’s maple butter 😮💨
Recipe adapted from @halfbakedharvest maple glazed donuts!! I get so many of my meal ideas from her blog and always find it super easy to substitute ingredients for more nutrient dense choices when I need to 🫶🏼
