Leftover Spaghetti never looked better 🍝

Spaghetti Pie with Roasted Tomatoes
**goes without saying that if you don’t have ‘leftover spaghetti’, go ahead and boil some up 👌

3 cups leftover spaghetti
3-4 cups spaghetti sauce
1 cup cherry tomatoes
1 cup mozzarella cheese, shredded
1 cup cheddar cheese, shredded
2 eggs, lightly beaten
1/2 cup chopped parsley
1 cup parmesan cheese, grated
Kosher salt and pepper
2 tbls chopped basil
Olive oil
Preheat the oven to 350F
Grease a casserole dish or round skillet with olive oil.
Spread tomatoes out on a baking sheet. Drizzle with olive oil and sprinkle with salt.
Roast in the oven for 35 minutes. Let cool. When the tomatoes have cooled, toss them with the leftover spaghetti with 2 beaten eggs, the 2 cups of shredded cheese and parsley. Season with salt and pepper to taste and mix well.
Place the pasta in the casserole evenly, pressing gently with the back of a spoon so it will cook like a pie consistency. Spread the sauce evenly on top of the noodles. Top evenly with the Parmesan and place the casserole on a baking sheet in case it bubbles over. Bake for 40 minutes, or until the dish is hot and bubbling and Parmesan is slightly browning. Remove from oven, let cool a bit, sprinkle with basil and cut into wedges.
Serve plain or I topped mine with more roasted tomatoes. I often like to make a fried egg and serve that on top as well
