Triple citrus tomato salad. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Holding on to every last bit of summer tomatoes and turning them into beautiful dishes like this one from @ixta.belfrage’s book ‘Mezcla’. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Funnily enough, the inconspicuous pool of liquid sitting at the bottom of the platter was the real highlight. It was beyond bread dunking. It was slurp worthy. This is what happens when you layer thinly sliced beef tomatoes, season generously with flakey salt, and drizzle over lime, lemon and tangerine juice with a hint of maple syrup to balance the tang. But wait, there’s more! Add in the infused oil of crispy fried garlic, ginger, red chilli and jalapeño, let it all marinade for a moment, and you have yourself the kind of thing that needs to be bottled and sold in bulk. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Oh, and the actual tomatoes are fabulous too, of course!
