i made a soup which officially makes it fall 🫶🏼 lfg italian wedding soup season
mix 1/4 cup parsley, 1/4 cup parm, 1/2 lb ground pork, 1/2 lb ground beef, 1 egg, 1/2 cup panko, 4 garlic gloves, oregano & s/p together and form into the teeniest balls you can make, unlike mine. brown them in a pan on both sides and set aside.
dice 1 white onion, 5 carrots, 2 stalks celery and sauté in the same pan you used for the meatballs. add 2 liters of chicken broth and bring to simmer until your vegggies are ~al dente~. add your meatballs in and simmer for another 10-15 until they’re cooked through and remove from stove. add handfuls of spinach and squeeze 1 lemon. eat with acini de pepe pasta and too with more parm and parsley 🦦
