40 weeks today! Long Hampstead Heath walks and lots of tantalising spicy creations 😅. This one made today was quite delicious, a fragrant oxtail soup with star anise, lemongrass and rice noodles. ⁣ Cooked in a pressure cooker, if on the stove then just double the cooking time (2.5hr) until the meat is falling off the bone. ⁣ ⁣ Serves 6⁣ ⁣ * Dry roast spices - two cinnamon sticks, 5 star anise and a few cloves. Then add 6 generous sized oxtails bones, a few bay leaves, 3 bashed lemongrass, plenty of sea salt and fill with water until covering by 4 inches. ⁣ * Pressure cook for 1 hour.⁣ * In a separate pan sauté two sliced onions, 1 thumb sliced ginger, 4 sliced garlic cloves, coriander stalks, 2 red chillies, 4 sliced spring onions in coconut oil . Add to pot once pressure released. ⁣ * Also add in two sliced-peeled carrots, big handful green beans, plenty of fish sauce and a tbsp soy sauce. Simmer 15 minutes. Then add boy choy.⁣ * Serve with rice noodles, crispy shallots, fresh chilli, lime and coriander ⁣ ⁣
