NOW IS THE TIME to start making your own granola! ⏰ I picked up everything I need to make my favorite Fig Walnut Granola from the famous @Rainbow_Grocery bulk food section. You have to see it to believe it! Their bulk food section has everything from nuts and grains to olive oil, loose leaf teas, spices, sweets, detergent, shampoo and MORE! It’s heaven if you’re like us and trying to cut down on your plastic waste. We’ve been eating this granola recipe almost every day for the last TEN YEARS. It’s that good! We start every morning with a scoop of granola, homemade yogurt and local fruit. It’s a ritual that is good for us AND good for the planet because it’s completely PLASTIC FREE. The recipe is super flexible and can be made with any nuts, any oil and any dried fruit. I like coconut oil and brown sugar because it gives the granola a light and crispy texture that’s perfectly sweet. It also keeps for MONTHS in an airtight container which is why I like making a bulk batch. If you’re in SF you HAVE to check out Rainbow Grocery. They are employee owned and a true San Francisco gem. Ingredients: 2 1/2 pounds (13 cups) old-fashioned oats (must be gluten-free if you want the recipe to be gluten-free) 3/4 cup packed brown sugar 2 tablespoons cinnamon 1/2 tablespoon kosher salt 2 teaspoon ginger 1 pound (3 1/2 cups) walnut pieces (or pecans) 2 cups coconut oil, melted 1 cup maple syrup 20 ounces black mission figs, de-stemmed and sliced 1. Mix everything except the figs in a large bowl. 2. Spread on parchment paper lined baking sheets and bake for apprx 30 minutes at 340F, tossing halfway. 3.
