Welcome back to our end-of-summer #recipe series! Let's cook up some mini carmelized onion & gruyere grilled cheese sandwiches to pair with our 2020 Brut Bubbles. Ingredients: ✨ Sourdough Baguette ✨ Gruyere Cheese ✨ Yellow Onion ✨ Butter ✨ Mayonnaise ✨ Whole Grain Mustard Thinly slice your sourdough baguette and gruyere cheese and set them aside for later. Next, chop your onion into medium rings and add one tablespoon of butter and olive oil to a skillet on medium heat. Add and separate your onions. Next, pour a one-quarter cup of water into the saucepan and cover with a lid. Set a timer for 15 minutes and allow onions to caramelize. Coat one side of your sourdough slices with mayonnaise and flip. Add your gruyere cheese to one side and whole grain mustard to the other side. Remove your onions from heat and add to your sandwiches. Place your sandwiches back into the saucepan on low-medium heat and allow the cheese to melt. Cook on each side for about 2 minutes with the lid on, and remove from heat. Last but CERTAINLY not least, pop open a chilled can of Just Enough Brut Bubbles.
