THE cake of the season - imo. 💅🏽 RECIPE 🎨 Dry Ingredients: Herbs from 3 fresh sticks of rosemary and thyme 1 1/2 cups gluten free or all purpose flour 2 teaspoons baking powder 1 cup coconut sugar 1/2 tsp salt Wet Ingredients: 1/3 Olive Oil 2 large eggs whisked 1/2 cup plant based greek Yogurt Caramelized Fig Base/ “upside-down” part: 1/4 cup olive oil 3/4 cup coconut sugar MAKE IT: 1. Preheat oven to 350F. 2. Combine oil + sugar and cover the bottom of oil greased pan - arrange sliced figs from the middle outward and set aside 3. Combine dry ingredients + herbs in a bowl and set aside. 4. Combine sugar and oil till combined, add in 2 whisked eggs and mix till combined. Then add in 1/4 cup of plant based milk to thin batter and mix till all combined. 5. Stir in slowly dry ingredients into batter till combined and lump free - then pour into pan over figs. 6. Bake for 30-40 minutes until the top is golden-brown. Let the cake rest in the tin for at least 15 minutes before flipping to cut and serve. 7.
