roast chicken n potatoes is forever a comfort food 💌 don’t be intimidated it’s easy!!! get you a chickie, my butcher spatchcocked mine so don’t ask me how to do that because I tried once and uhh....so anyway, dry her off real good, rub some olive oil, zested lemon, grated garlic, rosemary, oregano, salt, peppa and throw in the oven skin side up on a wire rack above a lined baking sheet. 425 for 40 min. potatoes: recently learned this trick from @bonappetitmag and oh my game changer. half some yukon golds and place them face down on a baking sheet, pour water onto the tray just until there’s a thin layer covering the whole surface. Cover with foil and into the oven at 425 for 30 min until they’re tender. Remove foil, pour any excess water out. When cooled enough, drizzle with oil to generously coat everything and season with salt pepp and whatever else you want. Now back in the oven again under 500 degrees for 25 more minutes and omg!!!! Its the perfect potato
