Hot Honey Chicken Summer Rolls 🍯🌶 with peanut dipping sauce 🥜 Cool, crunchy, fresh - with a sweet heat kick that makes them SO addicting. 🛒You’ll Need: • 2 boneless, skinless chicken thighs • Vermicelli noodles • Carrots (julienned) • Cucumber (matchsticks) • Red cabbage (shredded) • Green onion (sliced) • Cilantro • Rice paper wrappers • hot honey 🍯🧄Hot Honey Garlic Marinade: • 1 tbsp sesame oil • 2 tbsp soy sauce • 1 tbsp hot honey • 3 cloves garlic, minced • 1⁄2 tsp paprika • 1⁄4 tsp cayenne • Optional: 1⁄2 tsp chili flakes • Optional: 1 tsp grated ginger • Squeeze of lime or 1⁄2 tsp rice vinegar 🥜Peanut Dipping Sauce: • 3 tbsp peanut butter • 1 tbsp soy sauce • 1 tbsp hot honey • 1 tsp rice vinegar or lime juice • 1 small garlic clove, grated • 1 tsp sesame oil • Warm water to thin 🔥how to make 1⃣ Whisk together the marinade ingredients and pour over your chicken thighs. Let it sit at least 20 minutes. 2⃣ Air fry at 375°F for 14-16 minutes, flipping halfway through. Be sure to check your thighs to ensure they hit an internal temp of 165°F. 3⃣ Cook your vermicelli noodles according to the package. Drain, rinse with cold water, and set aside. 4⃣ Prep your veggies and herbs. Everything should be thinly sliced so it’s easy to roll! 5⃣ Fill a shallow dish with warm water. Dip one rice paper sheet until just soft, about 10–15 seconds. 6⃣ Layer noodles, veggies, herbs just off the center. Roll once, then add chicken. Fold in the sides, then roll it up like a burrito. 7⃣ Fianlly, for the peanut sauce, just whisk everything until smooth and creamy. Thin with warm water until it’s a good consistency. Dunk & devour!
