in a lunch rut? I got you!! Vegetarian Stuffed Sweet Potatoes 1. Preheat oven to 425oF 2. Poke holes in sweet potatoes ( I usually prep 4-5 at a time) brush with olive oil and bake for 40-45 minutes until soft inside 3. Cook orzo according to package instructions 4. To a large bowl add 2 cups cooked orzo, 1 cup chopped cherry tomatoes, 1 cup chopped cucumber, 1 cup drained and rinsed chickpeas, 3 tbs chopped fresh dill, 3 tbs chopped fresh parsley, 3 tbs chopped olives, 2 tbs olive oil, 2 tbs red wine vinegar, salt and pepper to taste, optional 3-4 tbs of feta 5. Slice sweet potato in half and stuff with orzo salad 6. Drizzle with my golden tahini dressing: 1/3 cup tahini, the juice of half a lemon, 1 tbs maple syrup, 1 tbs garlic powder, salt, pepper, and 3 tbs of water to thin
