testing chicken before frying there are so many Filipino ways!! i need my tita 🥹 these two are both marinated overnight. Left is maggi, dati puti, garlic, ginger then lightly poached in its brine. Right is lime, fish sauce, ginger, vinegar, and garlic. both so so delicious. i think there is a lot to figure out. The next step is to air dry and then fry! today I’ll be smoking a whole case at home but I’m going to do it differently 👨🏽‍🍳
