My husband once had these stuffed pears years ago at a restaurant in Boston and I’ve been making them ever since for him. They are so simple to do and can be eaten as an appetizer or as a salad. The flavors pair so beautifully together and are a perfect seasonal treat!
Pears, Gorganzola, Walnuts, Honey and fresh Thyme just work together. If you make them for a dinner party, they can be completely set up in advance and parked in the fridge until you are ready to bake them off. I love simply serving them on a bed of arugula for a very simple presentation

Baked Stuffed Pears with Gorganzola, Walnuts and Hot Honey

Preheat oven to 400F
Slice 2 pears in half and using a teaspoon (or a melon baller) scoop out the centers. Lay them on a baking sheet that’s been lined with parchment. Sprinkle some Gorganzola cheese first and then top with some chopped walnuts. Sprinkle with fresh thyme and then crack some black pepper on top. Bake for 20-25 minutes or until the cheese is melty and bubbly and the pear begins to caramelize. Remove from oven and drizzle with hot honey. Serve as an appetizer or over a bead of arugula for a simple seasonal salad
