Pomegranate & harissa roasted aubergine. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Taking a moment to appreciate how silky and melt-in-your-mouth tender these aubergines were. My first cook from @sabrinaghayour’s new book ‘Persiana Everyday’ and it is everything I love about her style - minimal effort, maximum impact. 🙌🏼 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ After scoring, brushing with oil, and roasting the aubergines for 30 mins, they’re coated with this sweet, sticky and spicy glaze made from equal parts rose harissa (always @belazu_co), honey and pomegranate molasses, as well as some salt. A further 10 minutes in the oven and you have these succulent sponges bursting with flavour throughout. Think nasu dengaku...but the Middle Eastern version. So so delicious.
