Pea and Asparagus Risotto One of my springtime favorites 🥰 Before you start making your risotto, sauté some chopped asparagus and peas in olive oil, salt, pepper and garlic with a little onion. Cook for about 5 minutes then purée it with a little splash of vegetable stock. Set aside. Make your risotto per the instructions on the container but leave out 1/2 cup of broth at the end. You will be replacing it with your asparagus and pea purée. Once I mix in the puréed vegetable I like to add 1/2-1 cup of Parmesan cheese and 1/4 cup of Marscapone cheese too.
