Vegetarian Pineapple Red Curry⁣ ⁣ Thank you for the dinner inspiration last night @Eman neamat. Her latest video was a lovely red chicken curry. If your not following her, you should everything she makes looks incredible.⁣ ⁣ After coming back from Vegas celebrating the nuptials of one of my dearest friends, I was shot and didn’t know what to make. When we usually come back from a trip we order Thai food. Pineapple Duck Curry is my go to, so I made a vegetarian version of it because our favorite place was closed and I def had no duck or chicken at home.⁣ ⁣ Ingredients ⁣ 1 eggplant diced⁣ 1/2 onion diced⁣ 1 bell pepper diced ⁣ 1 small can of pineapple chunks drained⁣ 1 Tbsp. Ginger⁣ 4 garlic cloves minced⁣ Little jar of red curry paste⁣ 1 can of coconut milk⁣ full fat⁣ 1 Tbsp white miso paste (optional)⁣ Juice of 1-2 limes⁣ 1 heaping TBS brown sugar⁣ 1 Tbsp. Fish sauce⁣ 1.5-2 Tbsp soy sauce ⁣ 1 Tbsp. Olive oil⁣ Salt to taste⁣ Basil and cilantro for garnish.⁣ Rice as side⁣ ⁣ Directions⁣ In a large pan on medium low sauté onion, garlic and ginger in olive oil for 3-5 minutes till soften an aromatic. Add your red curry paste and miso and mix in. Allow this to cook for 5 minutes. Now add in everything but the pineapple and garnish and mix well. Cook covered for 15 minutes. Remove the lid and taste for seasoning and adjust. Cook for a few more minutes with the lid off to thicken the curry.
