What can I say, @ixta.belfrage’s book ‘Mezcla’ is the gift that keeps on giving. Whipped up this beauty for lunch in just a few minutes and now mushrooms on toast will never be the same.

These gorgeous @clarence_court eggs are fried in a garlicky, herby butter studded with meaty dried porcini mushrooms, and then finished with some lemon zest & juice, grated Parmesan, fresh parsley, flakey salt and chilli flakes, for good measure. 😉

All that remains is some crusty bread to dunk into those creamy yolks and scoop up all those crispy, golden fried bits. Mmm mmmm mmmm. Chef’s kiss. 😋
