A LOVE LETTER TO TUNISIA Next week we’re so pleased to be featuring @boutheina.b.salem for a 2 night takeover. Boutheina Salem celebrates her Tunisian heritage with family recipes perfected and passed down by her ancestors. Boutheina will be cookng a menu to tell the story of her family ‘Oula ritual’. ‘Oula’ is an ancient, seasonal practice when women from the same family or neighbourhood gather to craft spices, harissa, sun-dried tomatoes, cous-cous and grains. In Spring they distil aromatic waters from her family’s farm using old techniques; orange blossom, geranium, rosehip, jasmine and Nesri. The menu celebrates ancient techniques which have been carefully preserved over generations.
