Thought I had killed my starter with inattention before it miraculously revived yesterday. The Margaret Atwood episode I made at the start of 2021 accidentally summarized so much of what baking taught me... about time, about attention... about effort. My first big purchase after the lockdown 1 was an expensive benchscraper from polycarpo, then about 100 kg of flour which had all my friends going ‘isa lol wtf’. I don’t think I’ve baked all year, but how strange and sweet and that this pandemic pet lives on just in case I decide to. There’s really nothing like a hobby.
