Despite being utterly exhausting to prepare, the Ramos Gin Fizz survived Prohibition and outlasted just about every drink fad in the last century.
On top of the standard gin fizz recipe, inventor and bartender Henry C. Ramos added egg whites, orange flower water, lime juice, cream, and powdered sugar to his namesake Ramos Gin Fizz.
In drink lore, what happened next was 12 consecutive minutes of cocktail shaking.
Ramos was a perfectionist, and his namesake drink wasn’t perfect until it reached an almost-whipped state. (Experts agree that five minutes was probably closer to the actual shake time.)
Either way, the drink's explosive popularity forced bartenders to hire "shaker boys." These young men were enlisted specifically to shake up ultra-fluffy fizzes.
