I had the absolute pleasure to have a taste of @mixtlicloud in San Antonio, Texas. It all started with my good friend @thedavidalvarado who told me about dear Chef @rico__torres and the exploration trip they took to #Yucatan to discover all the story and secrets it has. Chef Rico and his team, immerse in the destination for more than a week to create a 10 course menu that will represent their culture and will tell the story. What I found even more special, is that because of the location of the restaurant, a little far away from the border, and specially further away from Yucatan, they can tell that story to everyone, from second generation Mexicans, Latinxs, americans, chicanos and more. The way the menu is curated, from adding popcorns to a dish because of the relationship Izamal has with the color yellow and corn, to the FANTASTIC flavor or every single dish, and the way every course was presented in such an elevated and carefully thoughtful manner, involving meaningful elements of the Yucatan cuisine, not only made this experience an incredible one, but also shows a very creative way to preserve, document and promote Mexican cuisine and culture.
