Well that was unexpected! Pickled strawberries win the weirdo delicious award of the summer! How you make them: Fill a jar with halved strawberries Fill 1/3 of the way with white balsamic vinegar Fill the rest of the way with water Add a bit of sugar Add some peppercorns Shake and refrigerate - they’ll be ready in about 2 hours! Works well with bad-ish strawberries 😂 as in the ones that are getting a bit mushy! But also great for the nice pretty ones too. I haven’t tried with frozen but that feels like it could have potential? They’d almost get a bit jammy I think. I don’t know. Maybe that’s a bad idea. Someone needs to try it. Sweetness-wise, I did about 1T sugar for a standard Ball jar. Currently can’t stop eating these on toasted bread with goat cheese and thyme and honey. Someone also sent me a DM and said to use the leftover vinegar with seltzer to make a shrub and I did it tonight and THAT WAS SUCH A GOOD IDEA. 😍
