These Garlic Parmesan Smashed Potatoes didn’t even make it 24 hours in my apartment.... SO GOOD!!! I could eat these with every meal 😛 How to make the potatoes - wash baby gold/medley potatoes & then boil in salted water for ~20 minutes or until the potatoes are tender. Once the potatoes are ready, pour them into a strainer and pat dry before placing them on a baking sheet with parchment paper. Take the bottom of a glass coated in a little olive oil, and gently press down on the potatoes until they are “smashed” but not totally flattened.
