SECRETLY EASY BUTTERNUT SQUASH MAC AND CHEESE πŸ˜› Not to be dramatic but I could eat this for every meal and who knows, I might!!! Ingredients: 2 tbs butter or oil A few sage leaves 4 cloves of garlic (minced) 1 medium diced red onion 1 thyme sprig Salt and black pepper 1 medium butternut squash peeled & diced (with the inside scooped out, YouTube how to cut one if you’re not sure) 1 box of pasta 1 1/2 cups of veggie or chicken stock 1 cup milk (I used 2% but you might be able to sub a dairy free milk like plain almond milk or oat milk) 1 1/2 cups of cheeeeeese (I used mozz and cheddar but you can use vegan cheese too!!!!) - bring a pot of water to a boil (this is for the pasta) - Melt your oil/butter in a separate pot with your sage - Add in onions and garlic - Add in the thyme, salt and pepper & mix - Add in butternut squash, veggie/chicken stock & milk (stir) - Bring to a boil, then reduce to simmer and boil (for about 10-15 min) - Add your pasta to the other pot which should have boiling water & cook like box instructs - Once your butternut squash mixture is ready, blend in a high speed blender until smooth (can use an immersion too blender but I don’t have one πŸ˜‚) - Drain your pasta and put it back into the pot (save some pasta water) - Add the butternut squash sauce to the pasta with your cheese & mix - ENJOY πŸ’• Recipe adapted from currytrail.in/butternut-squash-Mac-and-cheese πŸ’• #dinnerideas #macandcheese #butternutsquash #pasta #pastarecipe #easyrecipe #healthyrecipes #fallrecipes #pumpkin #squash #butternutsquashmacandcheese #traderjoes #dinnerrecipes #dinnerdate #healthy #healthyfood #ourplacepan #ourplace #fall #gamedayfood
