Never thought I’d be calling potatoes cute, but here we are 🥹😂 perfect for any holiday get together’s or just because. •16 baby potatoes •2 tbsp olive oil •1/4 cup sour cream or plain greek yogurt (use vegan for vegan) •Sea Salt & black pepper, to taste •1 tsp garlic powder + 1/2 tsp onion powder •2 tbsp nutritional yeast (optional) •1/3 cup vegan shredded cheese (or regular cheese) •2 tbsp chives •1 tbsp melted butter or ghee •Garnish: crumbled coconut bacon (can use regular bacon if not vegan) + chives or scallions 1. Scrub the potatoes. Poke each potato with a fork & place on a plate. Microwave 4-5 mins. Flip & microwave 4 more minutes. Cut Each potato in half. Scoop out the center of the potatoes into a bowl, leaving 1/4” near the skin so they don’t fall apart. place the potatoes cut side down on a greased sheet pan. Drizzle with olive oil. Bake at 450f for 10-12 mins until crispy. 2. While they are baking add the remaining ingredients to the bowl with the potatoe insides. Mix well. Taste and adjust as you’d like. Divide the mixture amongst the potato skins.
