SECRETLY EASY TOMATO BASIL SOUP & GRILLED CHEESE 😛 It’s officially cozy season 💕 Ingredients: 9 Roma Tomatoes 3 tbs olive oil 2 tbs unsalted butter 1 diced medium yellow onion 4 cloves of garlic (minced) 1 sprig of thyme 1 tsp salt 1/2 tsp black pepper 1 28 ounce can of Marzano tomatoes 1 cup of basil 2 cups chicken or veggie stock 2/3 cup heavy cream (optional) Directions: - Pre heat oven to 375 - Slice the Roma tomatoes in half, drizzle with olive oil, and then sprinkle with salt and black pepper - Roast tomatoes for 1 hour and then set aside - Heat 2 tbsp butter in a large pot - Add onion and sauté for a few min - Add minced garlic, thyme, salt & pepper - Add the can of San Marzano tomatoes into the pot and simmer for ~10 min - Add the chicken/veggie stock and the roasted tomatoes into the pot and simmer for another 30 min - Using a blender or an immersion blender, carefully blend the soup until smooth!! - If you’d like to add in heavy cream you can do that to the entire batch after, OR you can add it everytime you serve yourself a portion ☺️ Serve with a grilled cheese and ENJOY!! #dinnerideas #tomatosoup #grilledcheese #souprecipe #healthyrecipe #healthyfood #healthyrecipes #fallrecipes #tomatobasilsoup #squash #ourplacepan #ourplace #foodvideos #homemade #dinnerrecipe #mealprep #lunchideas #grilledcheeserecipe #intuitiveeating
