Grate garlic cloves into a large bowl and mix with EVOO and salt until a paste forms. Add in cooled beans and minced parsley, lemon juice and mix all together. Adjust flavors to taste and add a bit of water if you want it to be more saucy (perfect to dip some bread into the garlicky dressing)
