Our friend @Nikkidinki stars in this afterschool special called "How NOT to Make Yeast." The first step to making great bread is yeast. So don't kill your yeast! When you "Bloom (or proof) yeast" you wake up those little microorganisms with warm water and give it a little snack of sugar to get it going. She's using our active dry yeast which needs to be bloomed but even when using instant yeast (which technically you don't have to bloom) we do, because it proves that our yeast is alive and ready to do its job. There is nothing worse than finding out your yeast is dead when your bread just isn't rising. It's VERY important that your water be the right temp, about 110 degrees, which feels like warm but not hot bath water. If you use water that's too hot (140+) you will kill your yeast. Game over.
