The man behind the menu, Executive Chef Alan Nguyen, spearheads the development of @gemdining’s progressive Southeast Asian fare. The years of experience and impressive resume aside, Alan prides himself in being a hands-on learner, enjoying constant challenges, perfecting his craft, discovering new trends and techniques, and most importantly, passing on what he’s learned to the latest generation of cooks and chefs. Ultimately, Alan hopes to continue developing menus that not only excite local guests but draw in and capture the attention of guests far and wide. Alan’s passion for cooking began at an early age, and this passion for food led him to study cooking at the San Diego Culinary Institute. He started his career cooking up upscale Hawaiian-influenced cuisine at Roy's Restaurant in Anaheim, eventually working his way up through various kitchens in Las Vegas and Hawaii until he finally landed at Gem Dining, where he now works as Executive Chef. #KeiConcepts
