INGREDIENTS:
(use whatever seafood you'd like)
1/2lb bay scallops
1/2lb mussels
1/2lb fresh cod, cut into chunks
2 cups arborio rice
1 small white onion, diced
1/2 cup fennel bulb, sliced thin
3 garlic cloves, minced
1 lemon, zest only
1 stick of butter
6-8 cups chicken broth
1/2 cup grated parmesan cheese

DIRECTIONS:
1) Add chicken stock to a pot and place on medium heat.
2) Add 1 tbsp of cooking oil to a large skillet or wok over medium heat.
3) Add half stick butter and garlic to the pan and mix well. Once the butter is melted, add cod.
4) Cook cod for 2 minutes then remove and place in a dish to rest. Reserve butter in the pan.
5) Add scallops and cook for 2 minutes. Remove and place in the same dish with cod. Reserve butter.
6) Add onion and fennel to pan and saute for 2 minutes. Add arborio rice and mix well.
7) After about 1 minute, begin adding chicken stock to the rice 1 ladle at a time. Continue to stir, once the rice has absorbed the liquid add another ladle of stock. Continue this process for 10-15 minutes until the rice is cooked and tender to the bite.
8) Season with salt and pepper. Now add remaining butter and parmesan cheese. Once combined, add the cooked seafood back to the dish along with the mussels and 1 cup of remaining stock. Cover with a lid and steam for a few minutes until the mussels have opened up.
9) Adjust seasoning as needed. Add risotto to a bowl or plate. Top with fresh lemon zest and enjoy!
