Hack your soup game with cream cheese! π§ Here's how to make the coziest potato soup: Ingredients: π² 4 ounces local Ontario cream cheese π² 1-2 tablespoons olive oil π² 1/2 cup onion (chopped) π² 2 bay leaves π² 3-4 cloves garlic π² 2 potatoes (peeled and cubed) π² 2 1β2 cups stock (chicken or vegetable) π² 1β4 teaspoon ground chilli π² salt and pepper (to taste) π² green onions, bacon, or shredded cheese to garnish Method: π² Chop the onion and garlic, and peel and cube the potatoes. π² In a medium sized pot, heat the olive oil over medium heat. SauteΜ the chopped onions 2-3 minutes until they begin to brown. Then, add the garlic and cook another minute. Then, add the potatoes. Season everything with a pepper, ground chill, salt and bay leaves. π² Add the stock, turn the heat to low, and cook for 18-20 minutes or until the potatoes can easily be crushed. Add the soup to a blender with the cream cheese, and blend until smooth. π² Top with green onions, bacon bits, and shredded cheddar cheese.
