Stuck on what to bring for Christmas lunch or dinner? Blow them away with @lizthedietitian’s Caprese Wreath 🎄 It’s fresh, it looks amazing, and it can be ready in less than 10 minutes 🍃🍅 What you’ll need: - 1/2 jar store bought pesto (or homemade) - 1 bunch of Basil (look for fresh large leaves) - 2 punnets of cherry tomatoes - 220g bambini bocconcini - Extra virgin olive oil - Balsamic vinegar glaze Method: 1. Take a large circular platter or plate. Mine is 30cm in diameter. If you have a larger platter/plate, just add more tomatoes/cheese to fill it out. 2. Spread a ring of pesto around the outside. This will form the base of the wreath. 3. Arrange basil leaves up top of the pesto. 4. Cut one punnet of cherry tomatoes in half and leave the other punnet whole. 5. Arrange the tomatoes on top of the basil. 6. Add drained bocconcini. 7. Drizzle with olive oil, balsamic glaze and season with salt and pepper. Add a few smaller basil leaves on top.
