NISEI 🇺🇸🇯🇵
As a Japanese American, @nisei_sf spoke to me in a way no other place ever has. Created by one of the best young chefs in the world, Japanese American chef @davidcyoshimura cooked up a meal that tasted like home and one I’ll remember for the rest of my life.
His one Michelin star restaurant in the heart of San Francisco embodies the culture, style, and feeling of growing up Japanese American in the US. Using ingredients my mom cooked with growing up, Chef David made each dish familiar while offering a fresh perspective on Japanese food.
From Japanese rice crackers (senbei), eel (unagi), wagashi (Japanese sweets), to miso (fermented bean paste) I was so ready for this meal. What I didn’t expect was that almost every ingredient was grown, made, or harvested in the United States.
Luna Koshihikari Rice grown in Sacramento Valley by Wendy Tsuji
Miso made in San Francisco at @sharedcultures
Kombu grown in Sonoma County at @strongarmfarm
Tofu and Soy Milk made in Oakland at @hodofoods
Unagi farmed in Maine at @americanunagi
Wasabi farmed in Half Moon Bay at @halfmoonbaywasabi
That’s what it means to be Japanese American.
Born in American, shaped by Japan.
Thank you Chef David Yoshimura for an incredible meal, and shout out to @alec_nak of @akashi_kama for introducing me to this incredible restaurant!
