Itβs #nationalhoneymonth and we have Th e perfect recipe to celebrate! πRecipe Instructions:π Peel several slices of zest from the grapefruit with a vegetable peeler. Reserve one for garnish.π Add honey and 1/4 cup of water to a small saucepan and stir to combine (heat honey briefly tomake measuring easier).π Add several pieces of grapefruit zest, herb sprigs, and a small pinch of salt to the pan, and bringto a gentle simmer, stirring occasionally.π After five minutes, or until slightly reduced, take the pan off the heat and let the honey continueto infuse for at least ten minutes, then strain.π Meanwhile, preheat a stainless steel or cast-iron pan over medium heat.π Cut grapefruit in half crosswise and sprinkle the exposed surface of one half with demerarasugar. Place the cut side of the sugared grapefruit directly onto the hot pan. It shouldimmediately sizzle and smoke.π Let the grapefruit caramelize for about a minute, until the sugar has darkened and the fleshlooks charred. Gently remove from heat and let cool.π Once cool, juice into a clean container.π In a cocktail shaker, add a 1/2 ounce of infused honey syrup and 1 oz caramelized grapefruitjuice. Add ice and shake vigorously.π Strain into a coupe glass and top with Lavender 75 Reserve.
