I love baking, especially during the holidays! This year, I was inspired to incorporate my favorite chocolates from @russellstoverus into my baking and decided to put a holiday twist on a classic recipe. Introducing Peppermint Bark Chocolate Chip Cookies! These delicious cookies are super easy to make using Russell Stover Peppermint Bark Bars. Ingredients:
1 cup butter (softened)
2 tablespoons canola oil
1 cup brown sugar
1/2 cup sugar
2 eggs
1 teaspoon salt
2 teaspoons vanilla extract
1 1/2 teaspoon baking soda
2 tablespoons cornstarch
3 1/4 cups flour
1 cup milk chocolate chips
4 oz Russell Stover Peppermint Bark Bars (2 bars)
Directions:
Step 1: Chop Russell Stover Peppermint Bark Bars into pieces (about size of chocolate chips) and set aside.
Step 2: In a large mixing bowl, cream together butter, oil, and sugars until light and fluffy. Add eggs, vanilla, and salt and mix until combined. Add in the baking soda and cornstarch and half of the flour and mix well. Pour in the remaining flour and mix only until combined. Stir in chocolate chips and peppermint bark pieces. Cover and chill in refrigerator for one hour.
Step 3: Preheat oven to 350 degrees. Drop rounded spoonfuls of dough (about 2 tablespoons) onto a parchment lined baking sheet, leaving 2 inches between cookies.
Step 4: Bake 10-12 minutes or until edges are golden. Remove cookies from sheet and cool on wire rack. Store in an airtight container.
