π« Meal prep for work! Save this recipe for later π€πΌ
Ingredients:
Noodles (any kind! I used rice noodles)
Tofu (extra firm is better for this)
Cabbage (red or white)
Edamame (you can buy these peeled - saves time!)
Avocado
Raw broccoli (try it raw, itβs so good and healthy)
Shredded carrots
Sesame seeds
Squeeze of lime
π₯ Spicy Peanut Sauce
Crunchy peanut butter (or you can make your own - super easy, just mix peanuts until smooth!)
Soy sauce
Lime juice
Sriracha
Thin with water
π₯ Crispy Tofu
First press your tofu to release any excess liquid then pan fry. Add spices (I used fajita mix) and toss in olive oil until crispy.
