Spaghetti alla nerano 🇮🇹 save this for dinner tonight 🍝 1. Slice zucchini in rounds and sprinkle with salt. Let them sit on a wire rack and drain for 30-1 hour. The salt helps pull out the moisture so the zucchini browns better. In a large skillet over medium-high heat, fry zucchini in olive oil until golden 
 2. Bring a large pot of salted water to a boil. Add the pasta and cook until about 3 minutes under al dente. 
 3. Add butter and basil to another pot and let it melt. Add zucchini and a ladle of pasta water to make a sauce. 4. Add pasta
 5. Sprinkle in some caciocavallo cheese or pecorino off heat to make it extra creamy. * Add extra pasta water to help the cheese emulsify 
 6. Continue to toss (off heat!) sprinkling in extra caciocavallo or pecorino cheese, until the sauce is dense and creamy and the pasta is al dente, about 1-2 minutes more until pasta is al dente 
 7. Plate the pasta! Buon appetito!
