Buffalo milk ricotta #Ndunderi with sweet summer zucchini 🥒, crispy and golden, #stracciatella cream, chives 🌱 and a good amount of lemon zest 🍋 (remember the burrata and lemon zest love story? This is that, version 2.0) ✨⠀ ⠀ Originally made with ⁠spelt flour and curdled milk, they're nowadays prepared with #ricotta. They can be quite big and sort of cube-like, or simply shaped as gnocchi like here and are traditionally served with a tomato based sauce, flavored with pork rinds, pork chops and salsicce. ⠀ ⠀ Check my previous post for some infos on the history and traditions of this shape and the one before or the Gnocchi Highlights for some shaping videos ❤️⠀ ⁠⠀ ⠀ Makes 2 servings:⠀ Mix 300g buffalo milk ricotta (or just regular ricotta, but in this case you might need to add a tiny bit more flour since buffalo milk ricotta can be a tiny bit drier) with 40g grated Parmigiano, salt, pepper, a pinch of freshly ground nutmeg and 2 egg yolks, then incorporate 120g all purpose (0) flour. ⠀ Knead the dough briefly, until all is well mixed, then roll it into ropes and cut those into nuggets of your preferred size. Spread on a well floured surface. ⠀ In the meanwhile blend 130g stracciatella (which basically is the filling of burrata) with 1tbsp milk until smooth. You shouldn’t need salt and definitely don’t need any fat in here. ⠀ Slice 3 small zucchini (about 250g) into not too thin slices, around 2mm thick. ⠀ Bring a wide pan on medium heat, add 40g extra virgin olive oil and 2 cloves of garlic and let them golden, about 2min. ⠀ Turn the heat to high, add zucchini slices, toss once and spread them so that they’re not overlapping too much. Let cook undisturbed until golden, about 5min. Remove garlic, toss zucchini and let cook 3-4min more. Season with salt. ⠀ In the meanwhile cook Ndunderi in salted boiling water until they float (or a bit more if they’re big). Drain them and transfer into the pan. Toss well and serve on top of the burrata cream, sprinkle with finely minced chives, a generous amount of lemon zest and freshly cracked black pepper.
