Potato Salad “Growing up, my mom had our fridge stacked with these eggs tinted with a bright magenta hue. I knew that these eggs weren't the ones I'd be using to scramble with. These eggs were salted duck eggs, with the prize being the golden yolk in the middle. She'd make a simple salad of these eggs, onions, tomatoes, fish sauce, and lemon as an accompaniment to grilled or fried dishes. Funky salinity, bright acid, and that signature texture of the yolks as it slowly turned into a sauce to top off on hot, steaming rice was always a pleasure to eat.
