THIS IS TOAST Episode 1: Confit Garlic, Ricotta, Honey The first of a series in praise of toast. 🍞 This one works for breakfast, lunch or dinner. Its also very good served as martini hour bruschetta. 🍸 💋 (Serves 2) 1 bulb of garlic Olive oil Small bunch thyme Sea salt 200g ricotta Juice of 1/2 a lemon Sliced sourdough Runny honey METHOD Peel the garlic cloves and place in a small saucepan. Add enough oil to cover them. Add a small bunch of fresh thyme and cook over the lowest heat possible on the hob for 30-40 mins until soft. Remove from the heat and place somewhere cool. Whisk together the ricotta with the lemon juice and a good pinch of salt. Drizzle the sliced sourdough with olive oil and fry for about 3/4 mins either side on a medium heat. Spread toast with ricotta, top with the garlic. Drizzle with honey. Top with thyme fished out from the oil and a pinch of sea salt.
