In Doot Doot Doot, an indulgent surf and earth dish: truffled Western Rock Lobster is finished on the hibachi and served with a splash of velvety beurre blanc (warm butter sauce). The dish is dressed in bubbles of salmon roe, succulent ice plant, and black gold of the earth shaved tableside.
