Steak & Kidney Pudding
Ingredients
400g diced steak
200g ox Kidney - trimmed & diced
2 tbsp plain flour
1 medium onion finely chopped
1 medium carrot finely diced
1.5 tbsp beef dripping or veg oil
1 bay leaf
1/2 tsp thyme
200ml stout
200ml beef stock
Salt and pepper to taste
For the pastry
250g plain flour
125g suet
2 tsp baking powder
1/2 tsp salt
1/2 tsp thyme
1 tsp English mustard
150ml cold water
You will need a 1 litre heatproof bowl, foil, and some string.
1. In a heavy bottomed pan on a medium hob, melt the beef dripping and fry off the onion and carrot until the edges are golden. Remove and set aside. Turn the heat right up and brown the beef, then add the kidney, fry off for a few more mins then add the flour and stir for 2 mins.
2. Deglaze the pan with the stout and stock. Add the bay leaf, thyme and cooked onion and carrots. Cover loosely and simmer on low for 2 hours, stirring occasionally OR pressure cook (pressure up for 20 mins on high, if doing this reduce the amount of stock to 150ml each)
3. While the filling cooks, make the pastry. Put the ingredients in a bowl and rub in the suet for a couple of mins. Slowly add the water and bring together. Refrigerate for min 30 mins.
4. When the filling is cooked, season to taste and set aside to cool some. Grease a 1-1.5 litre pudding bowl. Flour your kitchen top and rolling pin. Tear off a quarter of the pastry and set aside. Roll out the big piece to a 1cm thick disc and press it into the bowl leaving 1cm border at the top. Spoon in the filling and roll out the small piece of pastry to make a lid. Place the lid on top and gently press it down around the edge to join it to the pastry sides.
5. Cover the bowl with baking paper and foil with a 3cm fold in the middle. Tie a piece of string around the bowl, knot it tight and leave a piece long enough to use as a handle.
6. Add 4cm hot water to a large, deep saucepan, place the pudding bowl in gently, cover the pan and simmer on medium low for 90mins, rest for 10 mins then turn out into a plate.
