6 Cheese Mac & Cheese. Recipe also on website & @peppertheapp #macandcheese #thanksgiving #thanksgivingdinner 1 box elbow mac 2 tbsp butter 2 tbsp flour 1 can evaporated milk 1/2 pint of heavy cream 1/2 cup pasta water 4 oz mozzarella 2.5 oz of fontina 4 oz Parmesan 3 oz Gruyère 4 oz cheddar 4 oz Monetary Jack Cheese 1 tsp garlic powder 1 tsp onion powder 1/4tsp mustard powder 1/2 tsp paprika 1/4 tsp Frank’s Red Hot 1/2 tsp peppercorns 2 tbsp chopped onions Dash nutmeg 1 bay leaf 1. Bring milk to a simmer and drop in peppercorns, onions, nutmeg and bay leaf. Cover and remove from heat. Let sit for 30 minutes. 2. Start roux the last 5 minutes, add butter and flour and cook for 3-4 minutes till golden, while whisking. 3. Cook mac to Al dente according to box. 4. Use a sieve and remove stuff from milk. 5. Slowly add milk to roux. Then add in 2/3 of cheeses, save some for on top of dish. Add in half cup of pasta water from mac to thin out sauce. 6. Strain max and add to cheese sauce. 7. Spray a large oven safe baking dish with cooking spray and add Mac and cheese. 8. Cover with remaining cheese and bake in oven at 350 for 20 minutes till bubbly and golden.
