Ardbeg - Whisky caramel toffee apples Fancy a warming winter dessert? Gather your friends and family around the BBQ this Christmas and make this delicious, warming winter recipe - the perfect sweet treat for Xmas Eve! Ingredients 6 x dessert apples 100g melted butter 300g granulated sugar 100g salted butter 200ml double cream 1 decent glug of Ardbeg Wee Beastie A good pinch salt Method Setup - one third technique with a medium pan 6 x metal skewers (hand forged is best, basic work) Peel all the apples and roast them whole for about 30 minutes until tender. Brush with the melted butter every so often, when they have a golden colour and are starting to soften, make your caramel sauce. Keep your coals running low and heat up the sugar in the pan until it melts and is golden, be careful not to burn it! Once the sugar has caramelised, stir in the butter, when the butter has melted add the cream and keep stiring until all is smooth and dissolved. Now to bring those fiery Hebridean notes into your life, pour in a decent glug of Ardbeg Wee Beastie and keep cooking for another couple of minutes until thick, and then leave to cool for 10 minutes. Skewer each of the apples and coat in the now very thick (and delicious) caramel sauce, leave to set over the side of a thick chopping board with a drip tray underneath.
