๐Ÿ‘๐Ÿฅฎ Chipotle and Apricot Sausage Rolls ๐Ÿ‘๐Ÿฅฎ - Save the recipe This oneโ€™s a goodie for the bank holiday guys.... ๐ŸŒž easy-peasy to make, really really nice on the eyes and totally delicious..... ๐Ÿ˜Ž home-made sausage rolls will transform any picnic/bank holiday party/beach trip/hamper. ๐Ÿงบ Make them once and you will see how simple they are - you may never go back. A great way to get first rate, delicious-tasting sausagemeat into your sausage roll from well-reared and looked after animals - try out @swaledalebutchers @ethicalbutcher @farmisonuk - some of my favourite online retailers doing amazing things with better meat - eat it less but make it the best you can - thatโ€™s my motto... ๐Ÿ‘ Happy rolling gang xxxx Makes 18-24 sausage rolls Ingredients 400g sausagemeat 2 tsp chipotle in adobo 7-8 dried apricots, soaked in hot water 1 tbsp thyme leaves 1 egg, beaten 1 x 320g pre-rolled puff pastry 5g sesame seeds 5g fennel seeds Method Preheat the oven to 220C/200C fan/gas 7. Drain and roughly chop the apricots. Put the sausagemeat, chipotle, apricots and thyme in a bowl, season well and mix everything thoroughly with your hands. Unroll the pastry onto a lightly floured surface. Cut across the length into 3 wide strips. Divide the meat mixture into 3 equal sized balls before rolling each ball into a sausage, each the length of the long side of the pieces of pastry. Lay a sausage along the length of the pastry and roll up tightly. If the pastry is sticky, refrigerate for another half an hour. Once each sausage is rolled cut each into small sausage rolls a few inches long. Brush with egg wash, scatter with the seeds and spread out onto lined baking sheets. Bake for 20-25 minutes until crisp and golden and dollop on mustard, piccalilli or any other favourite sauce.
