If you’d like to make these beans this week, you can. Step one, head to First Bloom or any approximation in your area. Step two, buy beans, onions and large dried chiles like New Mexican chiles (we have those). Step three, simmer those things together in plenty of water with a good amount of salt and olive oil till the beans are very tender and creamy. Eat with @caram3lo tortillas (we have those, too), maybe some sliced radishes, some fried eggs, or leftover chicken. Nice.
