There are very few food related festivals that can compare to a Finnish crayfish festival. Inspired by a critter that falls way down the Crustacean pecking order. The effort that the Finns and to be fair the Swedes go to surrounding the eating of it are extraordinary. Guests are expected to contribute to the festivities, over the years I’ve exhausted the repertoire of crayfish related jokes.
