have you ever heard of Farmstead cheese??? π§π§π§
on last weekβs trip to Vermont with @seventhgeneration we visited @shelburnefarms and learned all about their land and their Farmstead Cheddar
Shelburne Cheddar is made exclusively with the raw milk of their Brown Swiss cows. artisan cheeses are often made with milk purchased from a variety of sources, but farmstead cheese makers only use milk from the cows they raise.
as a supply chain nerd it was so cool to see the entire cheese process on the farm - see the cows grazing the pastures, see a cow get milked (and even bottle feed a bb cow), see where the cheese is made every day, and taste the cheddar. we learned they even use the excess whey liquid from the cheese making process to fertilize the land!!
my whole day at Shelburne farms made me think a lot about how disconnected we are from our food and where it comes from, and I wonder what our world would be like if we all could have a farmstead / literal farm-to-tummy experience like this
